So, I did what I normally do in those situations, and started mixing random things together and baking them to see what would happen. Eventually, I nailed it.
Maple Pecan & Almond Granola
INGREDIENTS:
- 3 cups of rolled oats
- 1 ½ cups of chopped pecans
- 1 ½ cups of sliced almonds
- ½ of a cup of pure maple syrup
- ½ of a cup of honey
- ¼ of a cup of canola oil
- 2 teaspoons of vanilla
- ¼ of a teaspoon of cinnamon
- 2 dashes of pumpkin spice
- 3 dashes of nutmeg
- A pinch of salt
DIRECTIONS:
- Preheat oven to 250°F
- Mix the oats, pecans, and almonds into a large bowl
- Mix together all the wet ingredients and the spices, and pour over the dry mixture, mixing thoroughly
- Spread granola onto 2 baking sheets, and spread evenly
- Bake for 45 minutes, stirring every 15 minutes
- Bake for 25 more minutes, or until golden brown
- Let granola cool on a cooling rack, and granola will get crunchy
- Store in an airtight container
- Enjoy plain, or in yogurt, or in cereal...the possibilities are endless!!!
